    Which of the emulators in Retropie work with retroarch.
    I know SNES does because I have that running fine…

    Till I become a bit more OK with all this, I would like to
    try another emulator but one which uses Retroarch for
    control settings etc…

    Read through /etc/emulationstation/es_systems.cfg. Look for systems that have a <command> setting that includes /opt/retropie/emulators/retroarch/. Then you can look for the <path> setting in the same <system> section to see where to put your roms to try out that system
